Big blue: rare indigo-hued lobster surfaces in Canada’s East—New Brunswick.

It’s just not easy being blue—that is, if you one of those one-in-two-million blue-hued lobsters pulled from New Brunswick waters. This feisty specimen will never face the fate of his compatriots—boiled to bright red for the plate—but all of that attention in the touch tank at the New Brunswick Aquarium and Marine Centre in Shippagan must be exhausting for this colourful crustacean. Notes the aquarium’s website: “Did you know? Lobsters come in orange, yellow, tangerine and white,” too.

For the rest of the lot bound for the dinner plate, spring lobster season in New Brunswick generally begins in May and continues throughJune, but fresh or frozen Atlantic lobster can make a special holiday treat.
