Ten best new restaurants in Canada in enRoute mag marks emergence of Canadian cuisine.

Canadians have always had trouble pointing to a national cuisine. We’re largely a nation of immigrants, so we talk about “going for Chinese food,” or we rave about the “great new Italian restaurant” in our neighbourhood. But that’s changing, and enRoute’s magazine’s list of the 10 best new restaurants in Canada confirms it.

Our chefs now are stridently local. Gone are the days when local green beans don’t measure up to haricot verts and goat cheese is imported from France. Local Kitchen and Wine Bar in Toronto, ON spells out its mission in its name. Others, like Vancouver, BC’s Bao Bei may sound ethnic, but its raison d’etre is the same. The master of farm-to-fork dining—Michael Stadtländer of Eigensinn Farm fame—has taken it up another notch with Haisai. Even the dinner plates are his own creation!
