Canada’s best confer at Chefs’ Congress, and here’s one tasty result: a Yukon Territory gourmet getaway.

Just so you know, Chef Schiffkorn is expecting you to harvest wild berries and sage with him in the woods. Don’t be late now.

Pardon me if I keep this short, because I’m on my way out to see Carson Schiffkorn at his chi-chi lodge on the Yukon Territory’s Marsh Lake. If you knew what he was serving me, I know you'd understand.
 
A 30-minute drive south of Whitehorse, YT, Inn on the Lake has hosted all manner of dignitaries like Adrienne Clarkson and “who’s who”s like Martha (yes, that Martha, before she went to jail). In September, Schiffkorn joined forces with Air North’s chef, Michael Bock, and they took Toronto, ON by storm during the Canadian Chefs’ Congress, delivering an elegant and exclusive repast for a discerning crowd at the Rosewater Supper Club. The Congress, a biennial shindig of Canada’s best kitchen wizards, brings chefs and farmers, foragers and artisanal food producers together. The idea is to reinforce the passion of our Canadian food culture, and underscore the concept of chef as ambassador and educator for sustainable living.
 
I’m the sucker who got to preview one of their practice meals: rhubarb and caramelized parsnip soup, a pinwheel roll of fresh halibut stuffed with Alaska King crab, ragout of braised caribou on Yukon Gold potato gnocci... who knew that being a northern locavore involved such hardship?
 
The good news is that since they blew 'em away in T.O., Air North and Inn on the Lake have teamed up to offer a Yukon getaway for foodies. This isn’t your average culinary vacation—a visit to Schiffkorn’s kitchen is participatory to say the least. He’s counting on you to go out and pick wild berries and sage with him, and he’s sending you home with recipes.
 
Get on a plane in Edmonton or Calgary, AB or Vancouver, BC, and a two-hour flight and 30-minute drive later, you’ll be standing in the herb garden at Inn on the Lake conferring about dinner.
